Ingredients

For the Cookie Crust:

  • 1 tube 16.5 oz refrigerated sugar cookie dough

For the Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 8 oz whipped topping such as Cool Whip

For the Toppings:

  • 12 oz fresh raspberries about 3 to 4 cups
  • 2 cups fresh blueberries about 1 dry pint

Instructions

Prepare the Cookie Crust:

  • Preheat your oven to 350°F (175°C). Line a 13×9-inch baking pan with parchment paper. Press the sugar cookie dough evenly into the pan. Bake for 15-20 minutes, or until the edges are lightly golden. Remove from the oven and let it cool completely.

Make the Cream Cheese Frosting:

  • In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth. Gently fold in the whipped topping until well combined.

Assemble the Fruit Pizza:

  • Once the cookie crust has cooled, spread the cream cheese frosting evenly over the top. Arrange the blueberries in the top left corner to represent the stars. Next, create alternating rows of raspberries to form the red stripes, leaving small gaps between each row for the white stripes.

Add the White Stripes:

  • If desired, pipe additional whipped topping between the red stripes to enhance the white stripes’ appearance.

Chill and Serve:

  • Refrigerate the assembled fruit pizza for at least 30 minutes before serving, allowing the flavours to meld and the frosting to set.
