Ingredients

  • 1 pound boneless skinless chicken breast (sliced thin)
  • 1 cup chopped onions
  • 1/2 cup chopped carrots
  • 1 cup chopped cabbage
  • 4 heads baby bok choy chopped
  • 1 cup Enoki mushrooms
  • 1 pound yakisoba noodles pre-cooked, rinsed
  • 4 tablespoons olive oil
  • 4 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons sweet soy sauce
  • 3 tablespoons sriracha
  • 1 tablespoon crushed garlic
  • 1 tablespoon crushed ginger
  • 1 tablespoon chopped cilantro for garnish

Instructions

Step 1: Prep the Ingredients

  • Slice the chicken thin for quicker cooking.
  • Chop the vegetables into bite-sized pieces.
  • Rinse and separate the yakisoba noodles to prevent sticking.

Step 2: Heat the Blackstone Griddle

  • Preheat the griddle to medium-high heat.
  • Add 2 tablespoons of olive oil and spread it evenly.

Step 3: Cook the Chicken

  • Place the sliced chicken on the griddle.
  • Cook for 5-6 minutes, flipping occasionally, until golden brown.
  • Remove and set aside.

Step 4: Stir-Fry the Vegetables

  • Add the remaining 2 tablespoons of oil.
  • Toss in the onions, carrots, cabbage, bok choy, and mushrooms.
  • Stir-fry for 3-4 minutes until slightly tender but still crisp.

Step 5: Combine Everything

  • Add the cooked chicken back onto the griddle.
  • Toss in the yakisoba noodles and mix well.
  • Pour in the soy sauce, sweet soy sauce, brown sugar, sriracha, garlic, and ginger.
  • Stir everything together for 3-5 minutes until well coated and heated through.

Step 6: Serve and Garnish

  • Remove from heat and plate immediately.
  • Garnish with chopped cilantro.
