Step 1: Prep the Ingredients
- Slice the chicken thin for quicker cooking.
- Chop the vegetables into bite-sized pieces.
- Rinse and separate the yakisoba noodles to prevent sticking.
Step 2: Heat the Blackstone Griddle
- Preheat the griddle to medium-high heat.
- Add 2 tablespoons of olive oil and spread it evenly.
Step 3: Cook the Chicken
- Place the sliced chicken on the griddle.
- Cook for 5-6 minutes, flipping occasionally, until golden brown.
- Remove and set aside.
Step 4: Stir-Fry the Vegetables
- Add the remaining 2 tablespoons of oil.
- Toss in the onions, carrots, cabbage, bok choy, and mushrooms.
- Stir-fry for 3-4 minutes until slightly tender but still crisp.
Step 5: Combine Everything
- Add the cooked chicken back onto the griddle.
- Toss in the yakisoba noodles and mix well.
- Pour in the soy sauce, sweet soy sauce, brown sugar, sriracha, garlic, and ginger.
- Stir everything together for 3-5 minutes until well coated and heated through.
Step 6: Serve and Garnish
- Remove from heat and plate immediately.
- Garnish with chopped cilantro.
