Instructions
Step 1: Prep the Ingredients
Slice the chicken thin for quicker cooking.
Chop the vegetables into bite-sized pieces.
Rinse and separate the yakisoba noodles to prevent sticking.
Step 2: Heat the Blackstone Griddle
Preheat the griddle to medium-high heat.
Add 2 tablespoons of olive oil and spread it evenly.
Step 3: Cook the Chicken
Place the sliced chicken on the griddle.
Cook for 5-6 minutes, flipping occasionally, until golden brown.
Remove and set aside.
Step 4: Stir-Fry the Vegetables
Add the remaining 2 tablespoons of oil.
Toss in the onions, carrots, cabbage, bok choy, and mushrooms.
Stir-fry for 3-4 minutes until slightly tender but still crisp.
Step 5: Combine Everything
Add the cooked chicken back onto the griddle.
Toss in the yakisoba noodles and mix well.
Pour in the soy sauce, sweet soy sauce, brown sugar, sriracha, garlic, and ginger.
Stir everything together for 3-5 minutes until well coated and heated through.
Step 6: Serve and Garnish
Remove from heat and plate immediately.
Garnish with chopped cilantro.
