Ingredients
  

For the Chicken
  • 1 ½ lbs boneless skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons butter
  • ¼ cup soy sauce
  • 2 tablespoons minced garlic
  • 1 teaspoon minced ginger
  • 3 tablespoons honey
  • 3 tablespoons brown sugar
  • Salt and pepper to taste
For the Vegetables
  • 2 medium zucchini sliced into spears
  • ½ medium onion sliced
  • 1 tablespoon butter
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 –2 tablespoons soy sauce
  • Salt and pepper to taste
For Serving
  • Cooked rice or fried rice
  • Yum yum sauce

Equipment

  • Blackstone griddle (or any flat-top grill)
  • Spatula
  • Tongs
  • Knife and cutting board
  • Small mixing bowls

Method
 

Step 1: Preheat the Griddle
  1. Heat your Blackstone griddle to medium-high heat. Add 1 tablespoon of butter and 1 tablespoon of avocado oil to the griddle surface.
Step 2: Cook the Vegetables
  1. Add the zucchini and onions to the griddle.
  2. Season with garlic powder, salt, and pepper.
  3. Drizzle soy sauce over the vegetables and stir-fry for about 5-7 minutes until tender-crisp.
  4. Move them to the side of the griddle to keep warm.
Step 3: Cook the Chicken
  1. Melt 2 tablespoons of butter on the other side of the griddle.
  2. Add the chicken pieces, season with salt and pepper, and sear for about 2 minutes.
  3. Stir in minced garlic and ginger, cooking until fragrant.
  4. Pour in the soy sauce, honey, and brown sugar.
  5. Stir-fry the chicken until fully cooked and coated in a glossy sauce (about 5–7 minutes).
Step 4: Serve and Enjoy
  1. Plate the hibachi chicken with a side of rice.
  2. Drizzle yum yum sauce over the chicken or serve it on the side for dipping.
  3. Garnish with sesame seeds or chopped green onions if desired.
