Step 1: Preheat the Griddle
- Heat your Blackstone griddle to medium-high heat. Add 1 tablespoon of butter and 1 tablespoon of avocado oil to the griddle surface.
Step 2: Cook the Vegetables
- Add the zucchini and onions to the griddle.
- Season with garlic powder, salt, and pepper.
- Drizzle soy sauce over the vegetables and stir-fry for about 5-7 minutes until tender-crisp.
- Move them to the side of the griddle to keep warm.
Step 3: Cook the Chicken
- Melt 2 tablespoons of butter on the other side of the griddle.
- Add the chicken pieces, season with salt and pepper, and sear for about 2 minutes.
- Stir in minced garlic and ginger, cooking until fragrant.
- Pour in the soy sauce, honey, and brown sugar.
- Stir-fry the chicken until fully cooked and coated in a glossy sauce (about 5–7 minutes).
Step 4: Serve and Enjoy
- Plate the hibachi chicken with a side of rice.
- Drizzle yum yum sauce over the chicken or serve it on the side for dipping.
- Garnish with sesame seeds or chopped green onions if desired.
