Ingredients

  • 2 boneless skinless chicken breasts
  • Juice of 1 orange
  • Juice of 1 lime
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 tbsp Blackstone Citrus Garlic Mojo seasoning
  • 1 tbsp olive
  • ½ red bell pepper diced
  • ½ yellow onion diced
  • ½ cup corn kernels
  • ½ cup black beans rinsed and drained
  • Salt and pepper to taste
  • ½ cup stewed green chilies
  • Fresh chopped cilantro for garnish
  • 2 large flour tortillas
  • 1½ cups shredded cheese
  • Extra lime juice for finishing
  • Taco Bell hot sauce for serving

Instructions

Marinate the Chicken

  • In a bowl, combine orange, lime, and lemon juice with Citrus Garlic Mojo seasoning, salt, and pepper. Add chicken breasts and coat well. Let marinate for at least 15 minutes (or overnight for more flavor).

Cook the Chicken on the Blackstone

  • Preheat your Blackstone griddle to medium-high heat. Add olive oil and sear the chicken for about 4-5 minutes per side, until the internal temp reaches 165°F. Remove and let rest before slicing.

Sauté the Veggies

  • On the same griddle, add red bell pepper, onions, corn, and black beans. Cook until softened, about 3-4 minutes. Stir in stewed green chilies and season with salt and pepper.

Assemble the Burritos

  • Lay out the flour tortillas. Add a layer of cheese, then the sliced pollo asado, sautéed veggies, and a sprinkle of fresh cilantro. Squeeze some extra lime juice for added freshness.

Toast & Serve

  • Fold the burritos tightly and place them back on the Blackstone griddle, seam-side down. Toast for 1-2 minutes per side until golden brown. Serve hot with Taco Bell hot sauce.
