Ingredients
  

  • Chicken breasts or thighs – 4 pieces
  • Catalina dressing – ¾ cup
  • Olive oil – 2 tablespoons
  • Garlic minced – 2 cloves
  • Onion chopped – 1 medium
  • Bell pepper chopped – 1 medium
  • Salt – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Fresh parsley – 1 tablespoon optional, for garnish

Method
 

Step 1: Prepare the Chicken
  1. Pat the chicken dry and season both sides with salt and black pepper.
Step 2: Sear the Chicken
  1. Heat olive oil in a large skillet over medium heat. Add the chicken and sear for about 4–5 minutes per side until lightly golden. Remove and set aside.
Step 3: Cook the Aromatics
  1. In the same pan, add chopped onion, garlic, and bell pepper. Cook for 3–4 minutes until softened and fragrant.
Step 4: Add Catalina Sauce
  1. Pour in the Catalina dressing and stir well, letting it warm up and blend with the vegetables.
Step 5: Braise the Chicken
  1. Return the chicken to the pan. Spoon some sauce over the top, cover, and let it simmer on low heat for 25–30 minutes until the chicken is fully cooked and tender.
Step 6: Garnish & Serve
  1. Sprinkle with fresh parsley and serve warm.
