Ingredients

  • 1 pound red potatoes cut into bite-sized chunks
  • 1 pound carrots sliced into sticks or coins
  • 1 medium red onion sliced
  • 1 pound fresh green beans trimmed
  • ¼ cup olive oil
  • ½ teaspoon garlic salt or to taste
  • 1 tablespoon herb mix such as Italian seasoning
  • 1 teaspoon minced fresh rosemary
  • 1 pound chicken and apple sausage sliced

Instructions

Prep the oven:

  • Preheat your oven to 400°F (200°C). Line your sheet pan with parchment paper for easier cleanup.

Prep the veggies:

  • Add potatoes, carrots, and onion slices to a large mixing bowl. Drizzle with olive oil, then sprinkle with garlic salt, herb mix, and fresh rosemary. Toss until evenly coated.

Start roasting:

  • Spread the seasoned veggies on the sheet pan in a single layer. Roast for 20 minutes, stirring halfway through.

Add sausage and beans:

  • After 20 minutes, add the sliced chicken apple sausage and green beans to the pan. Toss everything lightly so the flavors mix.

Finish roasting:

  • Place the sheet pan back in the oven for another 15 minutes, or until potatoes are golden and the sausage is lightly browned.

Serve hot:

  • Remove from the oven and serve straight from the pan.
