Ingredients
  

  • 2 slices white sandwich bread
  • 1 –2 oz softened cream cheese whipped or block
  • 1 English cucumber or Persian cucumber
  • Salt and pepper to taste

Prepare the cucumber
  1. Wash and thinly slice the cucumber. You can peel it if you prefer a softer texture, but I usually leave the skin on for extra crunch.
Season lightly
  1. Sprinkle a small pinch of salt over the cucumber slices and let them sit for a minute. This helps remove excess moisture.
Spread the cream cheese
  1. Take your softened cream cheese and spread it evenly over both slices of bread.
Add cucumber slices
  1. Layer the cucumber slices evenly over one slice of bread.
Season
  1. Add a light sprinkle of salt and pepper for extra flavor.
Assemble the sandwich
  1. Place the second slice of bread on top, cream cheese side down.
Slice and serve
  1. Trim off the crusts (optional), then cut into halves or small squares for a classic tea sandwich look.
