Ingredients
  

For the custard base:
  • 4 egg yolks room temperature
  • 50 g granulated sugar about 1/4 cup
  • 1/8 tsp salt
  • 300 g heavy cream about 1 1/4 cups
  • 1 tsp vanilla extract
  • 200 g dulce de leche about 3/4 cup
For the whipped cream:
  • 240 g heavy cream cold (about 1 cup)

Method
 

Step 1: Make the Custard
  1. In a saucepan, whisk together egg yolks, sugar, and salt.
  2. Add 300g heavy cream and stir constantly over medium-low heat.
  3. Keep stirring until the mixture thickens slightly and coats the back of a spoon (about 5 minutes). Don’t boil it!
  4. Remove from heat and stir in vanilla and dulce de leche.
  5. Let it cool completely.
Step 2: Whip the Cream
  1. In a clean bowl, beat 240g cold heavy cream until stiff peaks form.
  2. Fold the whipped cream gently into the cooled dulce de leche custard.
  3. Mix slowly with a spatula until fully combined and fluffy.
Step 3: Chill & Serve
  1. Spoon into cups or ramekins.
  2. Chill for at least 2 hours before serving.
