Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.
Step 2: Prepare the Rhubarb Filling
- In a medium saucepan, combine white sugar, water, and cornstarch.
- Cook over medium heat, stirring constantly until thickened (about 5 minutes).
- Remove from heat and stir in vanilla extract.
- Add the diced rhubarb and mix well.
- Pour the rhubarb mixture into the greased baking dish.
Step 3: Make the Crisp Topping
- In a mixing bowl, combine flour, brown sugar, oats, and cinnamon.
- Pour in melted butter and mix until crumbly.
- Evenly sprinkle the oat mixture over the rhubarb filling.

- Bake for 50 minutes–1 Hour or until the topping is golden brown and crisp.
