Ingredients

  • 1 lb boneless skinless chicken breasts
  • 5 medium-sized potatoes cut into chunks
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika for potatoes
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp paprika for chicken
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce enough to coat the chicken
  • 1 cup shredded mozzarella cheese

Equipment

  • Crockpot / Slow Cooker
  • Mixing bowl
  • Measuring spoons and cups
  • Knife and cutting board
  • Tongs or spatula

Method

Prep the Potatoes:
  1. Cut the potatoes into chunks. In a bowl, toss them with olive oil, garlic powder, paprika, salt, and pepper. Spread them evenly in the bottom of your crockpot.
2 Season the Chicken:
  1. Rub the chicken breasts with salt, pepper, paprika, onion powder, and Italian seasoning.
Add Garlic and Sauce:
  1. Place the seasoned chicken on top of the potatoes. Add minced garlic and pour Buffalo Wild Wings Garlic Parmesan Sauce over the top until the chicken is nicely coated.
Slow Cook:
  1. Cover and cook on Low for 6 hours or High for 3–4 hours, until the chicken is tender and the potatoes are soft.
Add Cheese:
  1. About 15 minutes before serving, sprinkle shredded mozzarella over the top. Cover again until the cheese melts and becomes creamy.
Serve and Enjoy:
  1. Gently stir to combine everything and serve warm. The sauce will thicken slightly as it cools.

Notes

❖  Don’t skip the seasoning on the potatoes — it adds depth of flavor.
❖  Add mozzarella near the end so it melts perfectly.
❖  If the sauce is too thick, add a splash of milk before serving.
❖  Adjust garlic to your taste — I like it extra garlicky!
