Add melted coconut oil (or butter) and vanilla extract to the flour mixture and stir until a crumbly dough forms.
Place the peaches in the baking dish evenly.
Scatter the dough over the peaches, pressing down lightly.
Bake for 40 minutes, until the top is golden, and the peach filling is bubbly.
Serve warm with a scoop of vanilla ice cream.
