Ingredients

  • 6 large or 7 medium peaches thinly sliced
  • 1 1/2 teaspoons fresh lemon juice
  • 3/4 cup all-purpose flour
  • 1/4 cup cane sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil or unsalted butter

Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease your baking dish.
  • Slice the peaches and toss them with lemon juice in a bowl.
  • In another bowl, whisk together flour, cane sugar, cinnamon, baking soda, and salt.
  • Add melted coconut oil (or butter) and vanilla extract to the flour mixture and stir until a crumbly dough forms.
  • Place the peaches in the baking dish evenly.
  • Scatter the dough over the peaches, pressing down lightly.
  • Bake for 40 minutes, until the top is golden, and the peach filling is bubbly.
