  • 6 large or 7 medium peaches thinly sliced
  • 1 1/2 teaspoons fresh lemon juice
  • 3/4 cup all-purpose flour
  • 1/4 cup cane sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil or unsalted butter
  • 1 teaspoon vanilla extract
  • Vanilla ice cream for serving

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease your baking dish.
