Prep the peaches.
- If using fresh, pit and dice them. If using frozen, let them sit out for about 10 minutes before blending.
Blend the ingredients.
- Add the peaches, honey (or maple), non-dairy milk, vanilla extract, and lemon zest to a blender. Blend until completely smooth, stopping to scrape down the sides.
Taste and adjust.
- Depending on your peaches, you may want to add a bit more sweetener or zest. Give it a taste and tweak as needed.
Freeze it.
- Pour the mixture into a freezer-safe container. Smooth the top with a spatula. Cover and freeze for at least 3–4 hours, or until firm.
Scoop and enjoy.
- Let it sit out for 5–10 minutes before scooping. It softens quickly and becomes perfectly scoopable.
