Ingredients
  

  • 5 medium-size peaches pitted and diced (fresh or frozen)
  • 2 tablespoons honey or maple syrup for vegan option
  • ¼ cup non-dairy milk I like unsweetened soy milk
  • 1 teaspoon vanilla extract
  • 1 –2 teaspoons lemon zest adjust to taste

Equipment

  • High-speed blender or food processor
  • Freezer-safe container with lid
  • Rubber spatula
  • Knife and cutting board

Method
 

Prep the peaches.
  1. If using fresh, pit and dice them. If using frozen, let them sit out for about 10 minutes before blending.
Blend the ingredients.
  1. Add the peaches, honey (or maple), non-dairy milk, vanilla extract, and lemon zest to a blender. Blend until completely smooth, stopping to scrape down the sides.
Taste and adjust.
  1. Depending on your peaches, you may want to add a bit more sweetener or zest. Give it a taste and tweak as needed.
Freeze it.
  1. Pour the mixture into a freezer-safe container. Smooth the top with a spatula. Cover and freeze for at least 3–4 hours, or until firm.
Scoop and enjoy.
  1. Let it sit out for 5–10 minutes before scooping. It softens quickly and becomes perfectly scoopable.
