5medium-size peachespitted and diced (fresh or frozen)
2tablespoonshoneyor maple syrup for vegan option
¼cupnon-dairy milkI like unsweetened soy milk
1teaspoonvanilla extract
1–2 teaspoons lemon zestadjust to taste
Instructions
Prep the peaches.
If using fresh, pit and dice them. If using frozen, let them sit out for about 10 minutes before blending.
Blend the ingredients.
Add the peaches, honey (or maple), non-dairy milk, vanilla extract, and lemon zest to a blender. Blend until completely smooth, stopping to scrape down the sides.
Taste and adjust.
Depending on your peaches, you may want to add a bit more sweetener or zest. Give it a taste and tweak as needed.
Freeze it.
Pour the mixture into a freezer-safe container. Smooth the top with a spatula. Cover and freeze for at least 3–4 hours, or until firm.
Scoop and enjoy.
Let it sit out for 5–10 minutes before scooping. It softens quickly and becomes perfectly scoopable.
