Equipment

Ingredients

  • 5 medium-size peaches pitted and diced (fresh or frozen)
  • 2 tablespoons honey or maple syrup for vegan option
  • ¼ cup non-dairy milk I like unsweetened soy milk
  • 1 teaspoon vanilla extract
  • 1 –2 teaspoons lemon zest adjust to taste

Instructions

Prep the peaches.

  • If using fresh, pit and dice them. If using frozen, let them sit out for about 10 minutes before blending.

Blend the ingredients.

  • Add the peaches, honey (or maple), non-dairy milk, vanilla extract, and lemon zest to a blender. Blend until completely smooth, stopping to scrape down the sides.

Taste and adjust.

  • Depending on your peaches, you may want to add a bit more sweetener or zest. Give it a taste and tweak as needed.

Freeze it.

  • Pour the mixture into a freezer-safe container. Smooth the top with a spatula. Cover and freeze for at least 3–4 hours, or until firm.

Scoop and enjoy.

  • Let it sit out for 5–10 minutes before scooping. It softens quickly and becomes perfectly scoopable.
