Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup powdered sugar plus more for coating
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 2 cups White Lily all-purpose flour
  • 1 1/4 cups finely chopped pecans

Method
 

Step 1: Mix the base
  1. Beat the butter and powdered sugar in a bowl until smooth. I mix until it looks fluffy. Add the vanilla and salt.
Step 2: Add the dry ingredients
  1. Add the flour and mix until the dough starts to come together. It should be soft but not sticky.
Step 3: Add the pecans
  1. Fold the finely chopped pecans into the dough. Chopping them small helps the cookies stay round.
Step 4: Shape the cookies
  1. Roll the dough into small balls, about 1 tablespoon each. Place them on a baking sheet lined with parchment paper.
Step 5: Bake
  1. Bake at 350°F (175°C) for about 12 minutes, or until the bottoms turn light golden. They shouldn’t spread much.
Step 6: Roll in sugar
  1. Let them cool for about 5 minutes, then roll each cookie in powdered sugar. Let them cool again, then roll once more for a thicker snowy coating.

Notes

  • Roll twice in powdered sugar.
  • Keep the pecan pieces small.
  • Do not overbake.
  • Use softened butter for the right texture.
