Ingredients

  • 2 oz tequila silver or blanco
  • 1 oz passionfruit juice
  • 1 oz raspberry syrup store-bought or homemade
  • ¾ oz freshly squeezed lime juice
  • ½ oz simple syrup optional, to taste
  • 1 egg white or 1 oz aquafaba
  • Ice for shaking
  • Fresh raspberries and lime wedges for garnish

Instructions

  • Add tequila, passionfruit juice, raspberry syrup, lime juice, simple syrup, and egg white or aquafaba to a shaker without ice.
  • Shake hard for about 15 seconds. This dry shake builds the foam.
  • Add ice to the shaker. Shake again for 10–15 seconds until cold.
  • Strain into a chilled cocktail glass using a fine strainer.
  • Garnish with fresh raspberries or a lime wedge. Serve right away.

Tip from me: A longer dry shake gives a thicker foam on top.
