Method
- Add tequila, passionfruit juice, raspberry syrup, lime juice, simple syrup, and egg white or aquafaba to a shaker without ice.
- Shake hard for about 15 seconds. This dry shake builds the foam.
- Add ice to the shaker. Shake again for 10–15 seconds until cold.
- Strain into a chilled cocktail glass using a fine strainer.
- Garnish with fresh raspberries or a lime wedge. Serve right away.
Tip from me: A longer dry shake gives a thicker foam on top.
