Ingredients
  

  • 2 oz tequila silver or blanco
  • 1 oz passionfruit juice
  • 1 oz raspberry syrup store-bought or homemade
  • ¾ oz freshly squeezed lime juice
  • ½ oz simple syrup optional, to taste
  • 1 egg white or 1 oz aquafaba
  • Ice for shaking
  • Fresh raspberries and lime wedges for garnish

Method
 

  1. Add tequila, passionfruit juice, raspberry syrup, lime juice, simple syrup, and egg white or aquafaba to a shaker without ice.
  2. Shake hard for about 15 seconds. This dry shake builds the foam.
  3. Add ice to the shaker. Shake again for 10–15 seconds until cold.
  4. Strain into a chilled cocktail glass using a fine strainer.
  5. Garnish with fresh raspberries or a lime wedge. Serve right away.
Tip from me: A longer dry shake gives a thicker foam on top.
