Ingredients
  

  • 2 pounds red potatoes
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 small red onion finely chopped
  • 5 crispy cooked bacon strips crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped dill pickles
  • Salt and black pepper
  • Chopped chives or sliced green onions

Method
 

Cook the Potatoes
  1. Wash the red potatoes and cut them into bite-size chunks.Place them in a pot of salted water. Bring to a boil and cook for about 12–15 minutes until tender but not mushy. Drain and allow them to cool slightly.
Prepare the Dressing
  1. In a large mixing bowl combine:
  2. mayonnaise
  3. sour cream
  4. Dijon mustard
  5. apple cider vinegar
  6. Whisk until smooth. Add salt and black pepper to taste.
Add the Potatoes
  1. Place the warm potatoes into the bowl with the dressing.
  2. Gently stir so the sauce coats every piece. Warm potatoes absorb the dressing better.
Mix the Flavor Ingredients
  1. Add the following ingredients:
  2. chopped red onion
  3. crumbled bacon
  4. shredded cheddar cheese
  5. chopped dill pickles
  6. parsley
  7. Fold everything together gently.
Finish the Salad
  1. ▶ Taste the salad and adjust salt and pepper if needed.
  2. ▶ Top with chopped chives or green onions.
  3. ▶ Chill for about 1hour before serving for best flavor.

Notes

1. Cut potatoes into equal pieces for even cooking.
2. Do not overcook potatoes or they will break apart.
3. Mix dressing with warm potatoes for better flavor absorption.
4. Chill before serving for the best texture.
5. Add bacon just before serving if you want it extra crispy.
