Ingredients

  • 5 red potatoes
  • ½ cup reduced-fat mayonnaise
  • 2 tablespoons grated Parmesan cheese
  • 1 ½ tablespoons Dijon mustard
  • 4 teaspoons cider vinegar
  • ½ teaspoon cayenne pepper
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon paprika
  • ½ red onion thinly sliced
  • 2 green onions chopped

Method

Step 1: Cook the Potatoes
  1. Wash and cut the red potatoes into bite-sized chunks. Boil them in salted water for about 20 minutes until fork-tender. Drain and keep them warm.
Step 2: Make the Dressing
  1. In a large bowl, mix mayonnaise, Parmesan cheese, Dijon mustard, cider vinegar, cayenne pepper, salt, black pepper, and paprika. Stir until smooth and creamy.
Step 3: Combine While Warm
  1. Add the warm potatoes directly into the dressing. Toss gently so they absorb all the flavor.
Step 4: Add Fresh Ingredients
  1. Mix in the sliced red onion and chopped green onions. Stir lightly to combine.
Step 5: Serve Warm
  1. Let it sit for a 10 minutes, then serve while still warm for the best taste and texture.
